This mezcal is copper pot distilled and assembled (“ensamble”) by Emigdio using various agaves.
Roasted underground and then using a stone ground crusher, the pinas are combined with well water during fermentation, and distilled by Emigdio using his copper refrescador.
Tasting Notes
This Ensamble (amongst the rarest and most expensive) is a beautiful mezcal that, when available, is strictly allocated to those customers and partners that make great investments in Mezcal Vago themselves. Don Emigdio is one of four mezcaleros in the Vago family, working 5,000 feet above sea level in the Nanche district of Miahuatlán. The mineral-rich soils of the region are reflected in the flavour of this ensamble mezcal. Expect notes of juniper, candyfloss, and freshly cut grass, underpinned by citrus and flint.
